Savart Champagne, established in 1947 by René Savart in Écueil, has been led by his son Daniel and, since 2005, by Daniel’s son Frédéric.
Frédéric Savart, who initially pursued a football career, shifted to winemaking after meeting his future wife. He employs a proactive farming approach to prevent disease and allows natural processes like malolactic fermentation to occur without intervention.
Frédéric Savart manages four hectares of vineyards, mainly in Écueil with a smaller parcel in Villiers-aux-Noeuds. His vineyards are predominantly Pinot Noir, including a prized massale selection of Pinot fin d’Écueil, with only about half a hectare dedicated to Chardonnay. His wines feature single lieu-dits such as *Le Mont des Chrétiens* and *Le Mont Benoît*, alongside the *Expression* label wines crafted from old-vine Pinot Noir. All are bottled brut nature and from single vintages. In the cellar, Frédéric increasingly employs barriques for fermentation, balancing this with stainless steel to achieve complexity and finesse.
