Fabian from Champagne Chavost is a trailblazer in Champagne, redefining what it means to be a grower, négociant, or co-op member. With land acquisition being challenging, young winemakers are increasingly opting to buy grapes from trusted growers and operate under négociant models. Fabian, who runs a 5-hectare co-op with his family, has championed organic farming since 2016. His commitment to organic methods and no sulfur at bottling reflects his dedication to purity and transparency in his wines.
Located in Chavot-Courcourt, Champagne Chavost’s vineyards sit in a prime Champagne region with diverse terroir. Fabian’s champagnes are crafted using organic farming, spontaneous yeasts, and minimal intervention, aged in stainless steel tanks and bottled for at least 20 months, ensuring freshness and clarity.
