Vallée de la Marne
Nowack Champagne, originally a conventional winemaking family, shifted towards natural methods under Flavien Nowack’s leadership. After studying viticulture in Avize and meeting Guillaume Selosse, Flavien was inspired to adopt a more natural approach. In 2012, he applied these methods to La Fontinette, one of the oldest Nowack vineyards, resulting in a noticeable purity and depth in the wine and sparking an organic movement within the business.
Today, Flavien produces organic champagne on 2.6 hectares, using only copper, sulfur, fermented plants, and herbal teas to treat the vines. The grapes are fully ripened before harvest, and their must is fermented with indigenous yeasts. Located in Vandières, in the Vallée de la Marne, Nowack’s vineyards are primarily planted with Pinot Meunier, which dominates the region. Despite this, Nowack also produces Chardonnay and Pinot Noir, creating a diverse range of champagnes that highlight the terroir’s unique characteristics.
