Champagne Pierre Gerbais is a fourth-generation domaine in the Aube, currently led by Aurélien Gerbais. Known for its commitment to organic and biodynamic practices, the estate spans 18 hectares, featuring 10 hectares of Pinot Noir, 4 hectares of Chardonnay, and 4 hectares of Pinot Blanc. The vineyards, located in Celles-sur-Ource, benefit from a unique terroir with a mix of clay and limestone similar to Burgundy.
Aurélien Gerbais, influenced by Burgundian philosophy, combines organic practices with a focus on purity and precision. His approach includes minimal intervention in the cellar, avoiding added sulfur and emphasizing natural fermentations. The wines are known for their classic Burgundian style, clarity, and restraint, with ongoing experimentation to refine his winemaking techniques.
