Côte des Bar
Cédric Bouchard began making wine in 2000 from 1.37 hectares of vines in Les Ursules, Celles-sur-Ource, in the Côte des Bar region. His first wine, ‘Rosés de Jeanne,’ was released in 2002, named in honor of his Polish grandmother.
In 2012, Cédric moved to his own facilities and expanded his domaine, producing small quantities of exceptional wines with very low yields. His innovative approach includes bottling single-vineyard, single-grape variety (Pinot Noir, Chardonnay, or Pinot Blanc), and single-vintage cuvées.
In the cellar, Cédric conducts a meticulous second sorting of the grapes and employs a single pressing, deliberately avoiding any blending. He eschews the use of oak, chaptalization, fining, filtration, and cold stabilization, and refrains entirely from adding dosage. Fermentation relies solely on indigenous yeasts, with malolactic fermentation occurring naturally. The wines are racked only once before bottling. His philosophy centers on a long, slow, and cool second fermentation, which fosters finer bubbles and enhances the wine’s vinosity, producing champagnes that are exceptionally pure and distinctive.
