Ulysse Collin

Olivier Collin of Ulysse Collin, based in Congy, carries on a legacy of Champagne production that dates back to his family’s vine-growing roots in 1812. After his father sold the family estate in 1987, Olivier reclaimed 8.7 hectares of land in 2003 and started his own Champagne venture. Inspired by a transformative trip to Burgundy, he adopted a philosophy of minimal intervention and single-vineyard expressions.

His wines are crafted using Burgundian barrels and aged 36 to 60 months, with a focus on low dosage (1.7 to 2.4 grams per liter) to preserve their purity and complexity. Collin avoids fining and filtering and uses conventional viticulture to manage severe mildew, despite his interest in organic practices. Ulysse Collin produces around 60,000 bottles annually, highlighting the distinct terroirs of Champagne and Collin’s dedication to quality and tradition.
